Baked Eggs & Greens in Tomatoes

BAKED EGGS & GREENS IN TOMATOES

🍅Besides being super delicious, this recipe is a winner because it’s company-worthy ... 🍳And it takes just a couple minutes to throw together … and uses just one pan!



INGREDIENTS

INSTRUCTIONS

  1. Preheat your oven to 350ºF/175ºC.

  2. Heat oil in a nonstick ovenproof pan over medium heat. Add the spinach and season salt and pepper. Sauté for 2-3 minutes. Stir in the marinara sauce and bring to a simmer.

  3. Make 4 “wells” in the marinara sauce using a spoon, and crack an egg into each well. (Pro tip: crack the egg into a small bowl and then pour into the well, to avoid getting any shell in the sauce).

  4. Place the skillet in the oven and bake for about 20 minutes, until the egg whites are set but the yolks are still soft.

  5. 💡Serve with quinoa or rice for a full meal

NOTES

Get out enough fry-pans to to cook all the fish and chips at the same time.

Have a few staples in the fridge for when you just don't feel like cooking. So when you boil potatoes, double up and boil some whole potatoes, skin on. Once they are cold keep them in the fridge until needed. So Friday night don't mess around cooking much, buy the Salmon and use the left over potatoes.

If you are using fresh potatoes, adjust the cooking time accordingly.
