Delicious alternative to take away fish and chips.


INGREDIENTS

INSTRUCTIONS

  1. Boiled potatoes sliced 1cm thick to form little slabs.

  2. Sprinkle Macadamia Oil into fry-pans and heat on medium - low.

  3. Cook potatoes in pan for 5 min.

  4. Turn and sprinkle with Cajun Spice and cook for another 5 min.

  5. At the same time put the Salmon into the other fry-pan and cook, turning after 5 min.

  6. Cook for another 2 - 3 min, and take out and rest.

  7. If you want, steam some greens of choice, to add to the plate.

NOTES

Get out enough fry-pans to to cook all the fish and chips at the same time.

Have a few staples in the fridge for when you just don't feel like cooking. So when you boil potatoes, double up and boil some whole potatoes, skin on. Once they are cold keep them in the fridge until needed. So Friday night don't mess around cooking much, buy the Salmon and use the left over potatoes.

If you are using fresh potatoes, adjust the cooking time accordingly.
